SWEET AND SPICY SHRIMP TOFU

INGREDIENTS:

Set A:
1/2 kg. shrimps, peeled and deveined
4 pcs. tofu, cubes
4 pcs. onion leeks, chopped (optional)
Salt, to taste
Black pepper, to taste

Set B:
2 Tbsps. olive oil
5 cloves garlic, chopped
1 pc. medium onion, chopped
2 Tbsps. butter
1/2 cup UFC Tamis Anghang Banana Catsup
1/2 cup Datu Puti Oyster Sauce
1/2 cup water
1 Tbsp. UFC Spicier Blend Hot Sauce
2 Tbsps. brown sugar

PROCEDURE:

A. Heat pan and fry tofu until golden brown. Set aside.

B. Sauté garlic in olive oil until golden brown. Then melt butter and add onion. Turn heat down to low. Add UFC Tamis Anghang Banana Catsup and Datu Puti Oyster Sauce. Pour in water then add UFC Hot Sauce and brown sugar. Stir well and wait until mixture boils. Season with salt and black pepper to taste.

C. Add shrimps to the sauce mixture. Cover and let it boil for 3 minutes.

D. Add fried tofu cubes and let it boil for 5 minutes. Add more water if needed.

E. Transfer to a serving plate. Garnish with onion leeks or spring onion. Serve.

My husband and I stayed in Lapu-Lapu City, Cebu, for a few years. I had fun during those years because the area had an abundant supply of shrimps, which happened to be my favorite. Shrimps are so plentiful that there came a time when I did not know what to do with them anymore. I had tried all shrimp dishes that I knew, including Sinigang na Hipon, Drunken Shrimps, Ukoy na Hipon, Buttered Shrimps, and Garlic Shrimps… So I started experimenting. Remembering that tofu was my husband’s favorite, I incorporated it into one of the shrimp dishes I experimented on. That gave birth to this Sweet and Spicy Shrimp Tofu dish. I was very happy with the way the dish turned out. Not only did it suit my palate. It was very nutritious and easy to prepare as well. This dish summarizes our life together, my husband and I—sweet and spicy!
