Creamy Chicken Croquetas with Sweet-Chili Mayo Sauce

INGREDIENTS:

  • 6 tbsp Butter [Croquetas]
  • 1 cup all-purpose flour [Croquetas]
  • 1/4 cup UFC tomato sauce, Guisado [Croquetas]
  • 1 cup evaporated milk [Croquetas]
  • 1/4 cup all-purpose cream [Croquetas]
  • 1/4 pc chicken Bouillon [Croquetas]
  • 6 tbsp chicken stock or water [Croquetas]
  • 1/8 tsp nutmeg [Croquetas]
  • 1/4 tsp garlic powder [Croquetas]
  • 1/8 tsp onion powder [Croquetas]
  • 1/8 tsp salt [Croquetas]
  • 1/8 tsp white pepper [Croquetas]
  • 1/2 cup chicken breast, boiled and shredded [Croquetas]
  • 1.5 tsp mustard [Croquetas]
  • 1 all-purpose flour [Breading]
  • 1 egg ,white[Breading]
  • 1 bread crumbs [Breading]
  • 1/3 cup mayonnaise [Sauce]
  • 1/4 cup Jufran Sweet chili sauce [Sauce]
  • 1/4 tsp garlic [Sauce]
  • 1/8 tsp UFC garlic powder [Sauce]
  • 1 salt and pepper, to taste [Sauce]
  • 1/2 tsp mustard [Sauce]
  • 1/8 tsp UFC hot sauce [Sauce]

PROCEDURE:

1. Melt butter. Add flour and cook. Whisk in tomato sauce, evaporated milk, and cream.
2. Add chicken Bouillon, water, nutmeg, garlic powder, onion powder, salt and pepper. Add chicken breast. Mix until well incorporated. Adjust seasoning.
3. Add mustard off heat. Cool completely. Chill mixture for an hour.
4. Form into 2” croquettes. Dredge in flour, egg white, flour, egg white, and breadcrumbs. Chill for 15-30 minutes.
5. Deep fry until golden.
6. For the sauce: Mix all ingredients together.
