INGREDIENTS:
- 350 g chicken breast fillet, sliced to make five sheets
- 4 g Wow Sarap all-in-one seasoning granules
- 1/4 tsp UFC Ground Pepper
- 400 g UFC Garden Fresh mushroom, pieces and stem, chopped (reserve broth and 1/4 cup sliced mushrooms) [Stuffing]
- 6 tbsp butter or margarine, divided [Stuffing and Frying]
- 2 tbsp parmesan cheese powder [Stuffing]
- 2 tbsp milk
- 1/4 cup breading mix
- 1/4 cup UFC Hapi Fiesta Vegetable Oil (for frying)
- 250 g spaghetti noodles, cooked
- 8 cloves garlic, crushed
- 250 g UFC spaghetti sauce, Filipino style
PROCEDURE:
1. Season chicken with seasoning granules and pepper.
2. Combine mushroom, half of butter, and parmesan cheese. Stuff one side of the sliced chicken with this mixture and fold/roll. Secure with a toothpick if needed.
3. Soak in milk, then in breading mix. Fry in butter with oil until just browned. Let it rest for 10minutes before slicing.
4. In the same pan, remove excess oil, saute garlic and mushroom slices (including leftover stuffing). Add spaghetti sauce and ½ cup mushroom stock. Cover and simmer for 5 minutes.
5. Arrange chicken on top. Cover and simmer for another 5 minutes. Add cheese. Serve over cooked pasta.
