Adobong Gulay sa Gata

INGREDIENTS:

  • 1/2 lbs kalabasa, cubed
  • 15 pcs sitaw, cut into 2-inch pieces
  • 6 oz pork belly, sliced into small pieces
  • 1 cup gata
  • 1 pc medium eggplant, sliced
  • 1 pc onion, chopped
  • 3 pcs garlic, minced
  • 2 cups water
  • 2 tbsp cooking oil

 

PROCEDURE:

1. Boil water in a saucepan. Add pork. Cover and cook between low to medium heat for 20 minutes.
2. Remove the pork from the saucepan. Set aside. Reserve the water.
3. Heat oil in a pan. Saute onion and garlic until it onion softens.
4. Add boiled pork. Saute for 1 minute.
5. Combine Gata with the water used to boil pork. Stir and then pour the mixture into the pot. Let boil.
6. Add kalabasa. Cover and cook for 3 minutes.
7. Add and sitaw and eggplant. Cover and continue to cook for 5 to 7 minutes.
8. Fry liempo and add as topings.

9. Transfer to a serving plate. Serve. Enjoy!
