Afritada in Toyo

INGREDIENTS:

  • 2 pcs whole chicken, cut into serving portions
  • 1.5 cups flour
  • 1/4 cup palm oil, as needed
  • 1/2 kg white onion, chopped
  • 1 pc garlic, crushed
  • 1/8 kg red bell pepper, sliced
  • 1/8 kg green bell pepper, sliced
  • 4 pcs laurel leaves
  • 4 cups tomato sauce
  • 1/2 kg potato, half fried
  • 1 cup green olives
  • 1/4 cup fish sauce
  • 3/4 cup soy sauce
  • 2 cups water
  • 1 cup red wine

 

PROCEDURE:

1. Coat chicken pieces with flour and shallow fry until golden brown.
2. In the same pan, sauté onion and garlic, then add remaining ingredients. Cook for 5 minutes.
3. Add chicken. Cover and simmer for 25 minutes. Serve.
