INGREDIENTS:
- 1 whole chicken (about 1.2 kg), cleaned and drained
- 2 tsp calamansi juice
- 1/2 tsp Wow Sarap all-in-one seasoning granules
- 1 pouch Datu Puti Adobo Series
- 1 tsp whole pepper
- 1 pack all-in-one seasoning granules (4 g)
- 2 tbsp margarine/ butter
- 2 tbsp brown sugar
- 1 tbsp all-purpose flour
- 1/4 cup cane vinegar
- 3 tbsp sugar
- 1/4 cup ripe mango, diced
- 2 pcs tomatoes, seeded and diced
- 1 pc small white onion, diced
- 2 tbsp banana catsup
PROCEDURE:
1. Make a few slits at the back and legs of the chicken. Rub chicken with calamansi juice and seasoning granules.
2. Mix marinade ingredients. Marinate chicken (pouring some marinade on the inside cavity), flip chicken after 1 hour. Drain and keep chicken in the refrigerator overnight. Reserve marinade.
3. Preheat turbo broiler at 160 °F, broil chicken for 1 hour and 10 minutes or until the juice inside chicken is clear. Turn the chicken and baste with drippings after 30 minutes. Brush with margarine on the last minute of cooking.
4. Collect any drippings. Add reserved marinade, flour, and sugar. Simmer with constant stirring until thick. Serve as optional gravy.
5. Salsa: Combine vinegar, sugar, and seasoning granules. Simmer to dissolve sugar. Let it cool down before combining with the remaining ingredients.
