INGREDIENTS:
- 1 kg chicken leg quarter, fillet
- 3 tbsp fish sauce
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1/2 cup sukang sinamak
- 2 cloves garlic, pounded
- 1 stalk tanglad, pounded
- 1 pinch black pepper, to taste
- 500 grams chicken leg bones
- 1 tbsp canola oil
- 3 pcs laurel leaves
- 1 whole peppercorn
- 1/2 cup annatto seed
PROCEDURE:
1. Marinate chicken for 15 minutes at room temperature.
2. For the chicken oil, mix all ingredients in a saucepan. Cook for 5 more minutes. Strain the oil mixture then let it cool down.
3. Add some chicken oil to the marinate to achieve the orangey color. Mix.
4. In a hot grill pan, grill the marinated chicken fillet for 3 minutes each side or until cooked.
