INGREDIENTS:
- 1/4 kg pork kasim, cut into chunks
- 1/4 kg chicken thigh and leg, cut up
- 1/4 tsp iodized salt
- 1/4 tsp ground pepper
- 2 tbsp canola oil
- 1/2 cup sliced chorizo de Bilbao
- 1 pack (50 g) menudo/afritada mix
- 2 cups water
- 4 pcs ripe saba banana, peeled, sliced and half-fried
- 1 tsp fish sauce
- 1/2 cup cooked garbanzos
- 15 pcs Baguio beans, sliced
- 100 g cabbage, sliced
PROCEDURE:
1. Season pork and chicken with salt and pepper. Sauté in oil until brown on all sides. Set aside.
2. In the same pan, sauté chorizo. Add pork, chicken, menudo/afritada mix and water. Cover and simmer over low heat for 30 minutes or until tender.
3. Add fish sauce, garbanzos, and Baguio beans. Simmer for another 8 minutes.
4. Add cabbage and Saba. Allow to simmer. Serve.
