INGREDIENTS:
- 6 slices Bacon
- 2 tbsp Water
- 1 kg Clams
- 2 tbsp Onions – chopped
- 2 tbsp Garlic – chopped
- 2 tbsp Oil
- 1/2 cup White Wine
- 1 cup Stock/Water
- 2 pcs Corn – sliced into kernels
- 1/2 cup Cooking Cream
- 1/4 cup Parsley – finely chopped
- 1 pinch Salt and Pepper to taste
PROCEDURE:
1. Heat pan with water and bacon. Cook until fat renders and bacon is crispy. Set aside
2. Using the same pot, with bacon oil, saute onions and garlic
3. Add in clams, wine and stock. Simmer until clams open
4. Add in corn kernels and simmer until tender
5. Finish with cream and parsley
6. Transfer on a serving bowl, then top with crispy bacon
