INGREDIENTS:
- 1/2 kg boneless bangus belly
- 1/2 cup all-purpose flour
- 1/4 cup palm oil
- 1/2 tbsp palm oil [Soy Glaze]
- 1 tsp garlic, chopped [Soy Glaze]
- 5 tbsp soy sauce [Soy Glaze]
- 1/4 cup Vinegar [Soy Glaze]
- 3 tbsp brown sugar [Soy Glaze]
- 1/2 cup water [Soy Glaze]
- 1/2 tsp iodized salt [Marinade]
- 1/2 tsp ground pepper [Marinade]
- 2 tbsp garlic, chopped [Marinade]
- 3 tbsp calamansi juice [Marinade]
PROCEDURE:
1. Marinate bangus for 30 minutes. Drain. Roll fish in flour to coat all sides. Fry in oil until golden brown. Set aside.
2. Soy glaze: Sauté garlic until light brown. Add remaining ingredients. Simmer until thickened.
