INGREDIENTS:
- 2 tsp Oil
- 1 pc Egg – Beaten
- 3 tbsp Cooking Oil
- 1.5 tbsp Achuete Seeds – soaked in water for 30mns and drained
- 2 tbsp Achuete Oil
- 1 tbsp Butter
- 1/2 tsp Garlic – Minced
- 1/4 tsp White Onion – Chopped
- 1 tbsp Red Bell Pepper
- 1/4 cup Carrot
- 1/2 cup Corn Kernel
- 2 cups Cooked Rice
- 1 pinch Salt and Pepper
PROCEDURE:
1. For the achuete oil: heat oil and add achuete. Cool and strain oil.
2. For the egg: in a non stick pan, heat oil nd pour egg like crepe.
3. Cook and set aside. When cool, roll and slice thinly.
4. For the Rice: Saute onions , garlic, bell pepper and carrots in achuete oil and butter
5. Add chicken and cook. Add the rest of the ingredients
6. and mix until color is even or well distributed
7. Add egg and mix again
8. Mold in a plate then top with egg strips
