INGREDIENTS:
- 1/2 kg fresh cream dory fish, cut into cubes
- 1 tsp iodized salt
- 1/2 tsp whole pepper, cracked
- 1/2 cup vinegar
- 1 tbsp calamansi juice
- 1 tsp garlic, minced
- 1 tbsp ginger, minced
- 1 pc siling labuyo, chopped
- 3 stalks green onion, sliced
- 1/2 pc red bell pepper, diced
- 1/2 pc green bell pepper, diced
- 1/2 pc green mango, cut into strips
- 1 tsp fish sauce
PROCEDURE:
1. Season fish with salt and pepper. Mix. Add vinegar, calamansi, garlic, ginger, and sili. Chill for 1 hour.
2. Top with green onion, bell pepper, and mango strip. Season with fish sauce.
