INGREDIENTS:
- 1 kg whole chicken
- 1/2 cup Datu Puti soy sauce [marinade]
- 1/4 cup calamansi juice [marinade]
- 1/2 cup Mang Tomas All Purpose Sauce [Marinade]
- 1/2 cup lemon or lime soda [Marinade]
- 2 tbsp garlic, minced [Marinade]
- 1 pc onion, chopped [Marinade]
- 1 tbsp ginger, chopped [Marinade]
- 1/4 tsp UFC Iodized salt [Rub and Aromatics]
- 1 tsp UFC Ground Pepper [Rub and Aromatics]
- 2 tbsp Golden Fiesta canola oil [Rub and Aromatics]
- 4 stalks tanglad, pounded [Rub and Aromatics]
PROCEDURE:
1. Marinate chicken overnight in the refrigerator. Drain, reserve marinade.
2. Preheat the oven at 350F.
3. Combine salt, pepper, and oil. Rub the chicken with this mixture. Stuff with tanglad. Add reserved marinade.
4. Place chicken on a pan and bake in a preheated oven for 1 hour or until cooked, turning halfway.
5. Combine ingredients for sauce and drippings. Simmer until thick. Serve as gravy to the chicken.
