INGREDIENTS:
- 1 pc Fresh pineapple, peeled, cored and quartered
- 2 cans Locally Tamarind juice
- 60 ml Lime juice
- 4 pcs Springs of fresh coriander
- 1 tbs Chili powder
- 2 tbs Muscovado sugar
- 1 tbs Salt
PROCEDURE:
1. Take 2 quarters of the pineapple and puree in a blender
2. Take the last quarter and caramelize all sides in a pan and until it softens slightly
3. Cool and cut into small dice
4. Take half a lime and rub the rim of a glass
5. Mix together chili powder, sugar and salt and dip the rim of your glass in the mixture
6. Take some ice and put in a shaker
7. Add Locally Tamarind juice and top off with pineapple puree
8. Break 2 sprigs of coriander in half to release its oils and aroma and add to the shaker.
9. Finish with lime juice
10. Cover the shaker and shake well
11. Add some ice to a glass, add a tablespoon of diced pineapple
12. Top with your mocktail and finish with some pineapple puree
