INGREDIENTS:
- 1 pc Pomelo – peeled
- 30 grams Ice Berg lettuce – shredded
- 3 tbsp Red Onions – thinly sliced
- 3 tbsp Fresh Mint – coarsley chopped
- 3 tbsp Cilantro – coarsley chopped
- 2 tbsp Lemongras – white part – sliced thinly
- 2 tbsp Jufran Thai Patis
- 2 tbsp Jufran Sweet Chili Sauce
- 2 tbsp Sugar
- 1 tsp Garlic – finely chopped
- 1/2 pc Lemon Juice
- 1 pinch Salt and pepper
- 1/2 tsp Chili – Chopped (optional)
- 6 pcs Shrimps – poached
- 2 tbsp Cilantro Sprigs
PROCEDURE:
1. Peel pomelo and cut some into chunks, some into shreds. Set aside in the chiller
2. Make Dressing: Mix all ingredients together, season well
3. Mix pomelo with the rest of the ingredietns, then drizzle with dressing
4. Arrange in a platter, then top with poached shrimps and more cilantro
