INGREDIENTS:
- 5 cups Long Grain Rice – Thai Rice
- 3 tbsp Olive Oil
- 1 pc White Onions – Chopped
- 1 pc Green Bell Pepper – Roasted and Chopped
- 2 cloves Garlic – Minced
- 10 pcs Clams
- 8 pcs Shrimps – Shelled
- 1 pc UFC Laurel
- 1/4 tsp Thyme
- 1/2 tsp Salt
- 1/8 tsp UFC Ground Pepper
- 3 pcs Tomatoes – Seeded and Chopped
- 3 cups Seafood Stock
- 1 tsp Cajun Spice Mix
- 1 pinch Sugar
- 1 pinch Cayenne Pepper
- 1/8 tsp All spice
- 1/8 tsp Cloves
- 1/8 tsp UFC Black Pepper
- 1/2 tsp Paprika
- 1/8 tsp Cumin
PROCEDURE:
1. In a pan, saute shrimps and clams in olive oil. Season and set aside.
2. Using the same pan, Saute hungarian sausage in oil unti fat is rendered
3. Add in onions, roasted green bell peppers and garlic and cook until
4. onions bits are golden. Add rice, tomato and bay leaf
5. Add cajun spice mix, thyme and a pimch of suagr
6. Cook and stir rice until the rice is well coated with fat.
7. Season with salt and pepper. Add more seafood stock. Cover the casserole
8. simmer the jambalaya until the rice is cooked and the liquid is absorbed.
9. Add shrimps and clams before serving
