INGREDIENTS:
- 1/3 cup White sugar
- 1 tsp Cinnamon powder
- 3 cups All purpose flour
- 2 tsp Cream of tartar
- 1 tsp Baking soda
- 1/2 tsp UFC Iodized salt
- 1 cup Butter, softened
- 1/3 cup white sugar
- 1 pc Whole egg
- 1 pc Egg yolk
- 2 tsp Vanilla extract
PROCEDURE:
1. Pre-heat oven to 375˚F and prepare baking trays by lining with parchment paper. Set aside.
2. In a small bowl, combine white sugar and cinnamon powder. Set aside.
3. In a medium bowl, combine flour, cream of tartar, baking soda, cinnamon powder and salt. Set aside.
4. Using a stand/hand-held mixer, beat butter and white sugar until smooth. Add in the whole egg, egg yolk and vanilla. Continue mixing until well-blended.
5. Add in the flour mixture and continue mixing until well-blended.
6. Scoop out 1 Tbsp portions of cookie dough, roll in cinnamon-sugar coating and arrange on prepared baking tray making sure to leave at least an inch of space in between.
7. Bake cookies for 10 minutes. While still very warm, slightly press the cookies with the back of a spoon to flatten them out.
8. Cool completely before serving.
