INGREDIENTS:
- 1 pc Large Ampalaya
- 33/100 cup All Purpose Flour
- 1 pc Egg, Beaten
- 1 pc Filling
- 1/4 kg Ground Pork
- 2 Tbsp Datu Puti Oyster Sauce
- 1 pc Onion, Chopped
- 1 Tbsp Dried Shrimp (Hibe), Soaked in Water
- 1 pc Small Red Bell Pepper, Chopped
- 1 pc Sauce
- 1 pc Onion, Sliced
- 1 Tbsp Salted Black Bean
- 3/4 cup Chicken Stock
- 1 tsp Cornstarch
PROCEDURE:
1. Sliced ampalaya into rings (1 to 1 1/2 inches wide). Remove seeds.
2. Combine all ingredients for filling. Mix well. Stuff each ampalaya slice until full.
3. Dip in egg then roll in flour. Fry until cooked and brown. Set aside.
4. Simmer sauce ingredients until just thickened. Pour over ampalaya.
